Doremì was born in the ancient stables of Limatola Castle: a fine dining restaurant with an unmistakable culinary style, where tradition meets the most modern techniques.
Chef Executive Giacomo Ignelzi
Class of 1988, he was born in Benevento but spent his adolescence in Pietrelcina. In 2016 he decided to follow his true great passion, Cooking. Passion that stems from the love that his grandparents farmers passed on to him from an early age involving him in harvesting the fields of Pietrelcina and caring for the herds on the family farm. So in 2016 he passed the tests to enter the advanced training course at the Niko Romito Academy in Castel di Sangro, a course linked to the renowned three-Michelin-starred restaurant "Casa donna." After a year and a half, he graduated first in the course, an achievement that earned him a scholarship and a contract at the "Casa donna" restaurant where he would stay for nearly three years. From there, Niko Romito soon entrusted him also with "Spazio Milano" and then "Spazio Roma." With an important baggage behind him, the next stage sees him alongside Paolo Barrale at the restaurant "Marennà." Michelin star for more than ten years. The path to follow sees him for five years executive chef at "J Japanese Contemporary" in Naples: with the direction d three brigades he also becomes responsible for the Portici and Sorrento locations. Since April 2024 he has been marrying the project of the Sgueglia family with whom he has a strong bond of friendship and respect: today he is executive chef at Castello di Limatola.

The name "Doremì" is a tribute to the horse that lived here in the 1700s when the fief of Limatola was owned by the Gambacorta dukes. In our hall, his presence is recalled by the personal bowl found in the mangers by the Sgueglia family, current owners of Limatola Castle.
The culinary proposal aims to combine the tradition and scents of our land and an eternal and innovative gastronomic research, discovering new flavors. A gastronomic kingdom where to enjoy the chef's delights in a true culinary poetry, a pressing banquet that delights the senses, to the sound de'gusto!
